Mild Goat Cheese topped with Mushroom and Artichoke Ragu and Garnished with Sweet Banana Peppers and Italian Parsley

Spaghetti & Meataballa
Chef Mario Batali's Cherry Tomato Marinara (add a touch of Basil at the end), Whole Wheat Pasta, and Chef Mike's Homemade Meatballs.


Chef Mike's Homemade Crab Cakes 

8oz lump Crab 
1 cup of Seasoned Bread Crumbs 
1/4 Cup of Mayo
1 Tbs of Hot Sauce 
1/2 of a Small Onion (small-diced)
1/4 Cup of Corn 
1 Pinch of Fresh Cilantro 
Extra Virgin Olive Oil
Salt and Pepper 

Mix the first seven ingredients together season with salt and pepper to taste, then form the mixture into patties of your liking.
Pre-Heat a medium size skillet with a thin layer of Olive Oil. Once the oil starts to smoke lightly place the crab cakes into the pan leaving for about 2 mins on each side until golden brown, then place into oven on 350F for about 5 minutes.

Hog Squeeel !!!





Brine Recipe
4 Oranges sliced thin
3 Lemons also sliced thin
2 lbs of granulated sugar
2 lbs of iodize salt(or 2 1/4 lbs Kosher salt)
2 Yellow Onions sliced thin
1/2 lbs of Ginger rough chopped 
use a turkey fryer fill with water add all ingredients and bring to a rolling boil
to pull out natural oils and also to dissolve the salt and sugar let cool and pour directly over the pig.
Use a container that fits a pig just right any pig that is not covered by the bring just add water to cover pig completely and soak over night.





After soaking in Beast Brine, we must hang the swine to drain the excess liquid


To all that are interested in the hot box (caja) give me a email and I will give
you all the information so you can experience the way the beast roast his hogs!

The Beast hard at work you must make sure that
your fire is at the best temp possible. Start with a low temp of  
130F for two hours after move to 
145F for two hours now around this time you should be developing a nice char 
on the top layer of your pig. 
You must create a protective blanket of foil to protect the outer skin from burning.
Now, you must raise your temp to 160 for the remainder of time about 4 hours 
Overall total of about 9 hour.


Now that's how you roast a HOG the BEAST way enjoy!

Banana Bread


BEAST LOAFS !!!


WHEN YOU'RE AT HOME AND THE BANANAS THAT ARE SITTING ON YOUR 
COUNTER TOP HAVE BLACK SPOTS, WHAT DO YOU DO?
YOU MAKE (BANANA BREAD)!!!
THE BANANAS ARE AT... (AS I CALL IT) " THE SWEET PEAK" JUST BEFORE YOU THINK OF THROWING IT...

2 CUPS OF ALL- PURPOSE FLOUR
1 1/2 CUP SUGAR
1/4 CUP OF WATER
1/4 CUP MILK
1/2 CUP OF OIL
1 TSP OF BAKING SODA 
1 TSP BAKING POWDER 
1/2 TSP SALT (OPTIONAL)
1 TSP OF APPLE PIE SPICE (SECRET DON'T TELL)
3 EGGS
LAST BUT NOT LEAST THOSE WONDERFUL BANANAS
4 BLACK SPOTTED BANANAS 

    COMBINE ALL DRY INGREDIENTS 
THEN ADD WATER AND MILK
 ONCE INCORPORATED ADD EGGS TWO AT A TIME 
 BLEND WELL
TAKE YOUR BANANAS AND SMASH THEM
ONCE DONE COMBINE BATTER WITH BANANAS
BAKE IN A OVEN ON 325 DEGREES (F) FOR ABOUT 30-35 MINS OR UNTIL 
YOU CAN INSERT A KNIFE INTO THE BREAD AND REMOVE CLEAN.

NOW THE HARD PART... EAT AND ENJOY!!!

Anybody been to georgia lately?



 peaches poached in a simple syrup (simple syrup consists of equal parts sugar and water) and grilled and with brown sugar sprinkle on top.


oh so big, but yet so gentle... 

VOILA! 
flambe peaches coated in brown sugar topped with a raspberry and cream cheese swirl surrounded by balsamic reduction that contained brown sugar and agave nectar.
